Summer strawberries make a delicate, fragrant rosé-style wine. Use the ripest, most fragrant berries you can find for the best results.
Day 1: Hull and halve the strawberries. Place in a bucket and mash. Dissolve sugar in 2 litres of warm water and add. Add lemon juice. Top up to 4.5 litres. Add Campden tablet. Cover for 24 hours.
Day 2: Add pectolase and yeast nutrient. Check SG (aim 1.080). Add yeast.
Days 2–4: Stir daily. Strawberries ferment quickly.
Day 4–5: Strain into demijohn. Don't ferment on the pulp too long — it can go musty.
Maturation: Strawberry wine is best young — at 6 months it's fresh and fruity. After 12 months the strawberry character can fade. Drink this one relatively quickly.
